Brinjal Pickle Recipe Ingredients

Use the following ingredients to prepare or make Brinjal Pickle recipe at home.

250 gms Brinjal
1/4 tsp Turmeric powder ΒΌ tsp.
50 ml of Vinegar
50 gms Jaggery
100 ml Oil
Salt to taste
4 cloves Garlic
1" piece Ginger
5 Red chillies
For Powder:-
3 Cardamoms
1/4" Piece Cinnamon
2 Cloves
4 Peppercorn

Brinjal Pickle Recipe Making Procedure

  1. Wash and dry brinjals and cut into 1/2 inch cubes.
  2. Heat oil and fry ground garlic-ginger-red chilli paste and turmeric powder for 3-4 minutes.
  3. Add brinjal pieces and cook till almost done.
  4. Grind cardamoms cloves cinnamon and peppercorns into powder.
  5. Sprinkle with powdered spices and set aside till cool.
  6. Store in an airtight container.
