Step 1. Boil all the vegetables and keep them aside.
Step 2. Grind ginger and green chilies and keep them aside.
Step 3. To the sour buttermilk add besan and churn the above mixture well.
Step 4. Take oil in a vessel and add the above seasoning to it and fry them for 1 minute.
Step 5. Add the above vegetables and mix to it. Add salt to taste.
Step 6. Add grated coconut.
Step 7. Allow it to cook for some time (around 15-20 minutes) and garnish with coriander leaves.
Step 8. Serve hot with rice and pappad

Ingredients for Menthi Pulusu :
- 2 cups buttermilk
- 1 Potato
- 2 Carrots
- 1/4Bottleguard
- 2Tomatoes
- 1Brinjal
- 2 Green beans
- 3 Green chilies
- 1 Drum sticks
- Coriander - for garnishing
- 1 small piece of ginger
- 1/4 cup grated coconut
- 1 tbsp besan
- Chana dal, Moong dal, turmeric, red chilies, cumin seeds, Asafoetida, Menthi seeds
